Fresh Fruit Pie

This recipe was given to use from Grandma McMillan (Betty June McMillan). I believe it was inspired by the strawberry pies made a Big Boy restaurants. Strawberries, blueberries, black cherries, and peaches make excellent fresh pies. Make the filling described below and add the fruit. Experiment with different flavor of Graham cracker crusts. We like the Oreo cookie crust and the chocolate crust. To make a richer pie, try using a thin (1/8") layer of whipped cream cheese on top of the pie crust before the filling is added. This option is marked optional in this recipe.

  Ingredients

Cup granulated sugar

Tablespoons of cornstarch

Tablespoons of corn syrup

Cup of water

3 ounce package of jello (should be the same flavor as the fruit used -- see directions at bottom)

Graham cracker or Oreo cookie pie crust

8 oz package of Philadelphia cream cheese (optional for pie crust lining -- see directions at bottom)

Tablespoons of powered sugar (optional for pie crust lining -- see directions at bottom)

Teaspoon of Vanilla extract (optional for pie crust lining -- see directions at bottom)
  Directions
  If you are using the optional cream cheese lining, go below and prepare it first
  Mix the cornstarch, sugar, and corn syrup in a saucepan
  Add the water to the saucepan and bring the mixture to a boil
  Slowly mix in the package of jello
  Bring the mixture back to a boil for 1 minute
  Remove the mixture from the heat and stir in the fruit
  Pour the pie filling into the pie crust
  Chill for 1 hour before serving
  Directions for Optional Pie Lining
  Place the Philadelphia cream cheese in a mixing bowl and allow to get to room temperature
  Whip the Philadelphia cream cheese, powered sugar, and vanilla using a mixer
  Spread the cream cheese evenly in the Oreo pie crust
